With Diwali round the corner, everybody would be busy with full-on shopping and all the delicacy preparations. It’s that time of the year where even the most strict diet followers go easy on their regime because it’s JUST NOT POSSIBLE TO CONTROL THE TEMPTATIONS DURING DIWALI!!!!!
I am no diet follower (which I often repent of only when I am standing on the weighing scale 😉 ). But this recipe that I am going to share can definitely be any weight watchers best buddy! 😀 🙂
Additionally, it’s kid-friendly, power-packed, vegan, sugar-free, guilt-free, easily prepared, no-fail recipe!! Now isn’ that “legen—wait for it—dary!” 😀
It can also be a great after school snack for your kids. My son loves having them! The recipe is similar to my Homemade Energy Bars with some teeny-tiny variations.
Nutty Dry Fruit Laddos/ Bites
You will need :
- Dates – 1 cup (250 grams)
- Dried Figs – 1 cup (250 grams)
- Almonds – 1/4 th cup
- Pistachios – 1/4 th cup
- Walnuts – 1/4 th cup
- Cashew nuts – 1/4 th cup
- Raisins – 1/4 th cup
- Jaggery syrup or Honey – 1 tbsp (optional)
In a blender, grind all the nuts along with raisins into a coarse powder.
Then, grind the dates and fig together into a coarse paste. I used soft pitted dates and my figs were also fairly soft so making a paste was pretty simple. If you don’t have figs or they are too dry, you could just replace them by another cup of soft dates.
Mix the paste and nut powder till they bind well together. You could add 1 tbsp of honey or jaggery syrup if you feel they aren’t binding well but it’s completely optional.
Now grease your palms with coconut oil and make golf sized balls.You will approximately get 35 laddos with this recipe.
You could also roll these balls over dry desiccated coconut or roasted sesame seeds to give that extra flavor!!
Refrigerate and store them in airtight containers.
